Martino Ferrari d2ec89d866 docs: task 7 owns the shortcut window and the overview page ...

Task 1's review found two user-facing files that no task owned: src/ui/shortcuts.ui
still describes four accelerators as showing and hiding panes, and
src/help/01-overview.txt still lists the five-revealer column. Both were made false
by the tabbed sidebar and neither is caught by a probe, so give them an owner.
